Christine Cairo has a rich personal history with ice cream. While working with Poppa Web, the chief ice cream maker for a popular ice cream parlor on the south shore, she learned how to make ice cream from this 80-year-old craftsman. She continued to work at that shop for 25 years, learning the ins-and-outs of the business. She also learned from another respected Long Island ice cream legend, Walter Itgen, the elder. Christine was a regular at the Long Island Ice Cream Confectioners Association meeting.
From the wives of the first shop owners, Christine also learned the lost art of creating, molding and decorating chocolate as they did in “the old country.”
